8 pitted green olives, rinsed and minced
2 cloves garlic, minced
½ cup minced fresh flat-leaf parsley
¼ cup minced fresh mint
2 tablespoons red or white wine vinegar
2 tablespoons olive oil
1 teaspoon dried oregano
¼ teaspoon crushed red pepper flakes

ment therapy products (patches,
gum or lozenges) with a supportive
group setting and trained facilitators
hosting the meetings.

Chicken
1 pound boneless, skinless chicken
breast halves (2 large or 4 small)
1 teaspoon olive oil
¼ teaspoon kosher salt
Fresh ground black pepper, to taste
Instructions
Prepare chimichurri.
In the bowl of a food
processor or blender, combine olives, garlic,
parsley, mint, 3 tablespoons water, vinegar,
oil, oregano and pepper flakes. Pulse until
mixture is well combined but still chunky.
Scrape mixture into bowl, cover and let sit at
room temperature while preparing chicken.
(Chimichurri can be made ahead and refrig-
erated in a covered bowl for up to 3 days. If
made ahead, let chimichurri sit out at room
temperature for 15 minutes before using.)
Prepare chicken.
Rinse chicken under
cold running water then pat dry with
paper towels. Place 1 chicken breast in a
plastic bag or between 2 sheets of plastic
wrap. Using a meat mallet or rolling pin,
pound gently to an even ¼-inch thickness.
Repeat with remaining chicken breast(s),
then arrange them on a platter. Brush
chicken on both sides with oil then season
with salt and black pepper.
Cook.
Preheat a grill pan on medium-
high. Grill chicken breasts for 4 minutes
per side or until cooked through com-
pletely (no longer pink). Remove to a
carving board and let rest for 5 minutes.
Slice breasts crosswise into 1-inch pieces.
Place chicken on a serving platter or divide
among 4 plates and drizzle with chimi-
churri. Serve warm.

fat, 8g monounsaturated fat, 1.5g polyun-

United States Senate Minority Leader Mitch
McConnell and state Senate President
Robert Stivers visited Manchester Memorial
Hospital (MMH) in February and spoke to a
group about issues affecting Kentuckians,
including the Affordable Care Act. The stop
was one of several McConnell made across
southeastern Kentucky.
“Legislative issues that are near and
dear to our patients, hospital staff and
community were addressed during the
question and answer session with Senator
McConnell,” said MMH CEO Erika Skula. “We
were pleased to have the opportunity to be
proactive in discussing policies affecting us
as healthcare providers and our patients.”
During the event, Skula andWanda Hol-
lon, Director of Informatics, were recog-
nized by Stivers for the hospital’s accom-
plishment in getting certified as Stage 7
on the HIMSS Analytics Electronic Medical
Record Adoption Model (EMRAM)
SM
. This
represents attainment of the highest level
on the EMR Adoption Model, which is used
to track EMR progress at hospitals and
health systems. MMH is the first hospital in
Kentucky to achieve this certification, a fact
that was recognized in senate resolution
SR 139.
