Ingredients
1 tablespoon olive oil
¼ cup each chopped onion, celery and bell
pepper
1 cup shredded carrots
1 cup fresh small broccoli or cauliflower
florets
1 cup sliced fresh mushrooms
4 cups low-sodium chicken broth or
vegetable broth
½ teaspoon dried basil
¼ teaspoon minced garlic
¼ teaspoon pepper
1 low-salt vegetable bouillon cube, broken
1 cup baby spinach leaves
Mommy & Baby Fair

ANCHESTER MEMORIAL HOSPITAL hosted its second annual Mommy & Baby Fair at EKU’s Man-
chester Campus on August 26, to support new mothers and answer any questions they might have about their
pregnancy or infants. However, the fair wasn’t just for new or expectant mothers. Women interested in becoming
mothers, whether by birth or adoption, also got the information that they needed. The Health Department, with its WIC
and HANDS programs, was also present to educate the community on its programs.
Intermingled with these informational booths, the vendor booths were a kaleidoscope of colors and textures! Vendors not
only sold their products at discounted prices, but also gave away a lot of raffle and door prizes throughout the event.
Summer Fitness in Clay County
Manchester Memorial Hospital (MMH) celebrated a
successful collaboration with Promise Neighborhood,
a local educational organization, to bring the Summer
Fitness program to Clay County. The hospital sponsored
and hosted several events in 2014, including Access
to Healthy Foods, Nutrition Series, Diabetes classes
and CREATION Health Seminars. With this in mind, the
Summer Fitness program seemed the perfect way to
incorporate exercise and nutrition into a summer’s
worth of classes.
Each of the 24 class sessions began with 30 minutes of
thorough exercise. Guided by physical fitness instructors,
attendees engaged in Zumba, stair running, resistance
training and jumping rope.
MMH provided attendees with healthy snacks, such
as fresh fruit, granola bars and bottled water. The last
45 minutes revisited the intensive workout session, and
then the class concluded.
On the last day of the series, attendees were chal-
lenged to run from the middle school to the high school
and back. Eighteen people completed the run, and the
best time was taken by Jeremy Hacker at 40 minutes
and 43 seconds. After the run, local restaurant Theresy’s
provided a full meal to the runners, and the program
ended with a bang.
After its overwhelming success, MMH hopes to make
the Summer Fitness program an annual event.

15-minute Garden Vegetable Soup
Instructions
Heat oil in a Dutch oven over medium
heat. Add onion, celery and bell pepper;
cook and stir 2 minutes. Add carrots,
broccoli and mushrooms. Cook and stir
5 minutes.
Stir in 1½ cups water plus broth, basil,
garlic, pepper and bouillon. Bring to
boiling. Reduce heat; cover and simmer
5 minutes. Stir in spinach to wilt. Serve
immediately.

Serves 6. Per serving: 75 calories, 4g fat,
1g saturated fat, 0mg cholesterol,
496mg sodium, 8g carbohydrate,
2g fiber, 3g protein.
